Methanol is produced during fermentation and distillation, but reputable home distillers discard the "heads" (first fraction) which contains concentrated methanol. While technically methanol can form during home distilling, proper technique ensures it's removed and only ethanol-rich fractions are kept. Never attempt to make pure methanol intentionally it's extremely dangerous.
